Comfort Food - Mom's Potato Soup

 

Some of my favorite memories with my mom were in the kitchen. Everything she made seemed to be comfort food and here is one of my favorites - Pennsylvania style Potato Soup - great comfort food.

 

Use 4-5 potatoes - peeled & cubed.
A chopped onion and celery. It's all up to you - how much you want. I use a whole onion and 4 stalks of celery. 
Salt, pepper and fresh dill if you have it growing in your garden.
Place in a larger pot - and add 2 cans or 1 large box of chicken stock/broth over the vegetables. 
Add 1 stick of butter and 1 cup of sour cream. 
Thicken the soup with about 1 tablespoon of cornstarch mixed with 1/2 cup of milk.
Heat and do not boil. DELICIOUS!
